Untoasted American Oak Chips can be used in low doses at fermentation, and also ageing, of the spirits to emulate barrel characteristics. Use low doses at fermentation at the rate of 1 - 2 grams per litre of spirit. Use sparingly as it can impart a heavy 'woody' flavour to the final spirit.
